Frost on the Pumpkin Cookies

 

2 c. all-purpose flour

1 tsp. baking powder

1 tsp.ground cinnamon

½ tsp. baking soda

½ tsp ground nutmeg

½ c. butter

½ c. granulated sugar

½ c. brown sugar, packed

1 egg

½.c. applesauce

1 c. pumpkin

1 tsp. vanilla

½ c. raisins

½ c. chopped walnuts

 

In small mixing bowl combine flour, baking powder, cinnamon, soda and nutmeg. 

In larger mixing bowl beat butter for 1 minute. 

Add sugars and beat until fluffy. 

Add egg, applesauce, pumpkin and vanilla and beat well. 

Add dry ingredients to beaten mixture; mix until blended. 

Stir in raisins and walnuts. 

If mixture is too soft, place bowl in freezer ½ hour. 

Drop by rounded teaspoonfuls, 2 inches apart, on greased cookie sheet. 

Bake at 350 degrees for 10 minutes. 

Cool on cookie sheet for 2 minutes, then place on wire rack to finish cooling. 

Frost with Cream Cheese Frosting below.

 

 

Cream Cheese Frosting

 

3 oz. cream cheese

1 tsp. vanilla

¼ c. butter

2 c. powdered sugar

chopped walnuts

 

In a mixing bowl beat cream cheese, butter, and vanilla until light and fluffy. 

Gradually add powdered sugar, beating till smooth. 

Frost tops of cooled cookies. 

Garnish with chopped walnuts.
